Strawberry Tiramisu

Serves 6
Strawberries and mascarpone cheese are a wonderful combination. Make this a day ahead to allow the flavours to marry.
 
  • 340 g/12 oz mascarpone cheese
  • 2 tbsp single cream
  • 85 g/3 oz. caster sugar
  • 1 tsp. vanilla essence
  • 2 medium eggs, separated
  • 85 ml/3 fl oz milk
  • 85 ml/3 fl oz white rum
  • 225 g/9 oz boudoir biscuits
  • 450 g/1 lb strawberries washed and hulled
  • 150 ml/5 fl oz double cream
  • 4 Amaretti biscuits roughly crushed
 
  1. Beat the mascarpone, cream, sugar and vanilla until light.
  2. Whisk the whites until soft peaks form and fold into the cheese mixture.
  3. Slice half of the strawberries and fold in.
  4. Mix the rum and milk in a bowl. Dip the biscuits into the rum/milk pone at a time then use 1/3 of the biscuits to line the base of a serving bowl.
  5. Layer half the cheese mixture over the biscuits.
  6. Cover with another third of the biscuits and the remaining cheese mixture.
  7. Top with the remaining biscuits.
  8. Whip the cream to soft peaks and spread over the biscuits. Decorate the edge with the remaining strawberries. Sprinkle the amaretti over the cream. Chill for 8 hours.

Chilling Time: Overnight
Wine: Sauternes
